Local Zucchini Tomato Canapés

Makes 25 servings.
Cooking time: 30 minutes (active), 35 minutes (total)

Ingredients

  • 2 medium organic zucchini (locally grown, if available)
  • 1 large organic beefsteak tomato, chopped
  • 1 small organic shallot
  • 1 clove organic garlic
  • 2 basil leaves, rolled and cut into ribbons
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon organic Parmigiano Reggiano cheese
  • 1 box Kashi® TLC® Mediterranean Bruschetta crackers

Directions

  1. Slice zucchini in half lengthwise and cut into thin half moon shapes. In a large sauté pan over medium low heat, add oil, shallots and garlic. Cook for 2 minutes, stirring frequently. Add zucchini and sauté for 15 minutes, stirring frequently. Add tomatoes, season with salt and pepper. Continue cooking until most of the tomato liquid is reduced. Turn off heat and toss in cheese; mix well.
  2. Place Kashi® TLC® Mediterranean Bruschetta crackers on serving dish and spoon about 1 tablespoon of mixture onto each cracker. Serve.
