Kashi Friendly Fiber Pancakes

Makes 5 large pancakes.

Ingredients

  • 1 cup Kashi® Good Friends® cereal (process/crush cereal until it resembles flour)
  • ⅓ cup nonfat dry milk
  • 1 cup water
  • 4 egg whites
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • 1 tablespoon safflower oil
  • ¼ cup unbleached flour

Directions

Combine ingredients. Batter should be thin. Bake on hot griddle until sides of pancakes begin to dry. Turn only once.

This sounds good since there is no Sat Fat or Cholesterol! As long as they are healthy! I’ll post when I make them… only thing is, what to put on them? I don’t want to use syrup! Any suggestions?

Cool-Whip is a great topper for pancakes! Try it with some fresh (or thawed frozen) berries and you have a delicious and decadent breakfast without the calories!

Peanut Butter, blueberries, and sugar free syrup would be great on these!

Just try slicing a banana over the top! It is delicous. It is also awesome over buckwheat pancakes. Try it!
