Chilled Peaches and Yogurt Soup

Restaurant-quality soup or dessert in 10 minutes? You bet. With succulent peaches, agave, creamy yogurt, and mint, this dish is an ideal way to either start or finish a summertime meal.


Makes 4 servings
Cooking time: 10 minutes

Ingredients

  • 4 medium organic peaches, peeled and pitted
  • 1½ cups natural sparkling water
  • 2 Tbs. pure agave nectar
  • ¼ tsp. sea salt
  • 1 tsp. chopped fresh mint
  • ⅓ cup organic plain yogurt
  • Directions

    1. Place the peaches, sparkling water, agave nectar, salt and mint in a blender. Blend until smooth.
    2. Divide the soup between two chilled bowls.
    3. Garnish the soup with equal parts of the yogurt.
