i’m already there! i eat potaoes always with the skins on for extra nutrition and fiber!
lightly saute them in a little olive oil and garlic after microwaving them for a wonderful treat!

I love, love, love potatoes. The white ones that is. I can eat them baked, boiled, fried, mashed, and smashed. Can you tell I love potatoes? The only thing is when I eat them I load them down with everything. So this challenge will be a little hard for me. I’m going to try and eat a potatoe w/skin on plain. This may be like eating a potatoe for the first time all over again.
My husband is a potato fanatic. And I have to admit I love them too! We’ve always cut them up with the skins on and packaged them with butter and season salt to cook on the grill, but my new favorite is just a baked potato with sour cream. So this challange may be a bit difficult, but I’m going to try to eat them untampered with and naturally delicious!
Skin on potatoes are simply the best! I’ll have to try the olive oil and garlic. It sounds delicious!
I recently found out that not all potatoes are created equal. The Golden Yukon stands out in the field of white potatoes. Try baking it in its skin in the mocrowave and then just slicing it open. I mash mine a bit and add a little bit of salt and pepper. It doesn’t even need butter. Another way my family likes potatoes is roasted in the oven with a little olive oil and sea salt. Scrub them good and remove bad spots and eyes, then slice them thick with skins on, place them on a baking sheet with sides. Drizzle olive oil on them and mix them around in it then salt them and bake them for 20 minutes to 40 minutes (depending on thickness) in an oven at about 425 degrees. We also love sweet potatoes done this way.
Yellow Finns are even better. I love them because I don’t need to add butter. They taste great with just a little plain yogurt on top. I always steam frozen vegies and add them to the mix and nutritional yeast if I have it for B12. It is a perfect meal.
I use a potato for a meal base rather than pasta. Chopped sweet onions, low fat cottage cheese and grilled chicken in a potato is a meal!
I love them plain with no butter, salt or pepper, just baked. YUM!
Potatoes have always been a favorite, we used to eat the skins at my grandmothers, as she could peel potatoes (and apples) in a long spiral. We didn’t know then that that was the part with the most nutrition. Today my favorite way to eat anykind of potato is with the skin on grilled in a foil packet or baked in the oven with a drizzle of olive oil, a pinch of sea salt, fresh ground pepper and chopped fresh rosemary.
When eating a baked potato I like to use plain unsweetened yogurt instead of the sour cream.
I love a baked potato with the skin with a little bit of cottage cheese on it. It adds a different texture and gives the creaminess of sour cream. I will definitely have to try the olive oil and garlic, I actually have garlic olive oil so this will work great! I also like to enjoy microwaved sweet potatoes mixed with toasted pecans, yum.
I purchase potatoes in a steam bag ready to cook from Walmart store and in a matter of a few minutes they are ready to be eaten and are very good.
I don’t like white potatoes, but I’m going to have a sweet potato (or yam) which ever looks better at the store.
i actually already do this…i eat baked potatoes plain or alittle ketchup. the skin is the best part!!! also another way i do eat them is by adding cottage cheese on the top!!! its reallly reallly good! and good for you
I love Potatoes I cut them up into french fry slices, spray olive oil pam on a pan and bake on a low temp for over an hour, thry get crunchy as I like them… no salt or Ketchup their a great snack for energy, Vitamin C, and carbo’s when needed, the skins are great also… Nothing beats a great Pototoe the same goes for sweet Potatoe also they make great fies too!!!!
I usually eat my baked potatoes with sour cream and bacon bits but I am trying to eat healthier so I will try them with olive oil and with veggies. I also think the fries sound good. I will try different combos and see if I can creat something new!
I just bought 30lbs of potatoes last week. We’ve made mashed potatoes, had them baked, and covered them in cheese and other yummy toppings.
Today I pureed sweet and Idaho potatoes with an onion and a little garlic, mixed in some broth, added yogurt, topped it with chives and had me a stew going. Toast a few Gruyere croutons in the broiler and a plate of split and roasted brussel sprouts with walnuts, drizzle of olive oil. Toasty warm and I was full for hours.
I can’t imagine throwing away the skin! I won’t even eat fries that are peeled. Last time I had the flu, I told my boyfriend I needed mashed potatoes. He left the skin on and they were so good. Winter illness demands those easily digested ‘junk’ foods. This one is a real winner, since it isn’t really junk. I’ll try it with the cottage cheese next time-that has to be good. Oh, yeah-there are always fake TVP bacon chips, including the famous one.
Yum yum that sounds good,the pureed sweet potatoe and Idaho potatoe w/garlic etc. I think I’ll try that today
