Make leftovers into salad
Green beans, Brussels sprouts, leeks…the list of veggies that can be transformed from hot, dinner side dishes into delightful, lean salads is long and varied. Today, challenge yourself to make a little extra at dinner tonight and save your leftovers for salad. When you wake up tomorrow, quickly toss leftovers with a homemade vinaigrette, and take them to work for a tasty healthy treat.

I stuffed pitas with a garbanzo paste and my guests were able to top it with a large variety of vegies and sour cream. Leftovers go into a bowl and wa-la, instant salad.
The previous night I made some pork with steamed peas and potatoes. Ended up having exactly 1 cup of peas left, so the following night I just tossed them into a salad and that filled me up. Bad thing is, I was REALLY hungry prior to eating so I made a little extra pasta that went to waste. =/
I do this all the time, grilled chicken, left over chicken taco meat, anything can be made into a salad! I always make my own dressing too. I love honey, cider vinegar, worchestershire sauce and olive oil.
it’s just me and my husband so nine times out of ten instead of cooking a whole meal the day after we would take ouf left overs and make some type of salad e.g.skin fried chicken and dice and add with lettuce tomatoes cukes onions advacado and mayo.
Used the left over Pilaf and herb chicken on a bed of greens with rosted red and green bell peppers.
I try to make extra veggies and then put them in a container with salad dressing. The next day I make a bed of lettuce & fresh tomatoes then pour the leftover veggies onto it. Makes for a great meal!
I made chicken stuffed peppers for dinner tonight w/ steamed corn and green beans … I saved the raw pepper tops to throw in tomorrow’s salad with the leftover corn and beans.
I am making a veggie salad with leftover high fiber chicken enchilada’s.
I am making a 100% organic veggie dinner tonight (which is not that easy or that inexpensive)! I will double-down on the ingredients and enjoy the leftovers in a salad for lunch tomorrow. Thanks for the wonderful challenges!
