Green up your greens
When it comes to greening up a salad, it’s easy to think, what’s there to add? Microgreens are a great way to boost nutrition and add more complex flavor. What are they? Microgreens are actually small, delicate plants – salad greens, herbs, edible flowers, and leafy veggies. Examples include microfennel, microarugula, and micro-spinach.
Today, challenge yourself to find out where you can buy microgreens in your area. Then schedule a day to go buy some. (Since they’re a newer gourmet food trend, they may only be found in select gourmet stores.)

Stop taking warfarin! Ok Ok I know that not everybody can do that but increasing your greens to a normal dietary intake (such as 1-2 serves per day) shouldn’t pose any problem. Since you are probably regularly checking your INR anyway, just keep an eye on it now that you’re eating more greens. Your doctor may suggest that you reduce your Warfarin dose to accommodate the changes. And doesn’t it just make more sense to get a bunch of nutrients, antioxidants and other protective healing food factors that ALSO thin the blood through your food than with a drug? If your doctor suggests you stop the greens, garlic, ginger, etc – find another doctor. Good on you for thinking about it!
