    My poor mom… she used to try so many things to get me to eat veggie soup and i always turned up my nose. Now? I LOVE IT! Sure it’s great in the winter, but I eat it all year long using whatever veggies are available. Thanks MOM!

    I love veggie soup, I made a fabulouse one with escorole, two different types of beans, and some herbs for a kick! it was delicious and hearty. I put some of the beans in a blender at the end to puree it to make the broth a bit thicker!

    Since accepting this challenge, I have actually gotten on a soup binge. The veggie soup went over so well, I decided to make a few more… the latest in the fridge and freeze now is Lentil soup w/ tomatoes and spinach (more veggies!). We are even having colder days right now to really enjoy them…

    I love all soups, especially vegetable soup. I make it about 1 a month, I rotate a different soup every Saturday. As an LD, I know the importance of vegetables in your daily diet.

    I love soup and it is a great way to start a meal. It helps me fill up so I can limit more calorie laden foods.

    I live in the country and have a little garden each year. There is nothing better than to go out and get fresh veggies for a pot of soup.
    I put some veggies in the freezer so I can have soup all year long…mmm good!
