Soup up your leftovers
When food was scarcer and resourcefulness was essential, meat and veggie scraps were rarely discarded. From potatoes and carrots to chicken and squash, almost anything can be thrown into a soup pot or collected for a tasty broth. Add a little salt, pepper, herbs, or spices and you’re sure to cook up something delicious. This week, challenge yourself to use all your leftovers.

My husband teases me about never throwing away leftovers. If we open a can of vegetables, I save the water (we get “no salt added” varieties”) and freeze it to add to soups. If food is left in the fridge for a day or two without being touched, I put it in the freezer to be added to soup or muffins or …
My husband brags on my soups. It is really so simple. I use organic broth, add leftovers, or fresh, frozen \, or canned veggies. Whatever meat is left over or canned chicken and a package of rice or pasta mix. In 10 minutes I have a delicious meal.
I have done this for years. We have two bowls in our freezer. One I place left over veggies, noodles, potatoes and meat. When it is full I pull it out and have instant stew. Just heat w/broth and serve. The other bowl is for fruit. Add this and that of fruits and use in smoothies. Saves money and saves time running to store for all the “fixings” for a stew.
My mother started doing this…......my sisters and I thought she was nuts!!!!! But ya know what?
She’s really not, once you take time to think about it, instant soup and it is not prepackaged. :) put it over rice. yummmmmm
