Stocking up on vegetables that are flash-frozen is a great way to ensure that you always have nutritious ingredients on hand. But once they’re in your freezer, do you know how to use them before they spoil?

Today, challenge yourself to find a couple recipes that use your favorite frozen veggies. Then, add the ingredients to your shopping list and your menu for the week. It’s a nice opportunity to add to your cooking repertoire and stock your fridge with healthy foods at the same time.

I found several recipies that i had forgotten about, using frozen broccolii and one making a very low fat cheese soup using frozen summer squash

When we eat mac & cheese at our house I throw some frozen broccoli in with the noodles. They take the same amount of time to cook and you strain the water the same way. You end up with mac & cheese with broccoli.

i always try to find ways to sneak in frozen veggies in meals, my b/f isn’t too concerned about eating healthy. so i started to add mixed frozen veggies to crab alfredo and chicken casseroll. also i added frozen sweetpeas and carrots to a peppacorn ranch pasta salad.

i have a lot of recipies for frozen veggies i use frozen broccoli and corn and green beans you get it.and frozen is better than canned

I add frozen shredded veggies to my meatloaf, it makes it stay moist, the kids get the veggies and NO one but me notices

We buy frozen veggies all the time…canned goods are too pricey…plus I don’t really like the quality of taste from canned goods. Earlier today, I heated some frozen corn in melted butter…the kids love it. They say it tastes like popcorn. This evening, I used a mixed veggie….steamed them…and had them as a side for the main item. No complaints from the kiddos with those, either. I say…if the kids eat the veggies…don’t ever stop using them!

Frozen veggies work well for us. Being empty-nesters it’s been a challenge finding ways to cook for just two of us. And frozen veggies make it easy to fix only what we need, and not waste the rest.

I crave vegies every day. I made a great tomato soup and put in frozen broccoli, wild rice, sauteed onions and green peppers and we loved it.

When I make mac and cheese for my son i add pureed carrots to the cheese.

I use frozen veggies to make fast stir frys. I try to use frozen if I cant get the fresh and canned as a last resort.

I am a vegetrian and vegetables are in my diet all the time. I use fresh and when I can not get fresh the next BEST is frozen. There is no salt added to frozen which is the BEST reason for using frozen. And frozen are the closes to fresh.

Pureed carrots in mac && cheese? Cool idea. I mix a frozen veggie into every meal; it’s too easy not to. Tonight I made cheeseburger mac and peas. :) Last night, grilled chicken tossed with green beans and corn. So colorful and delicious.

I eat a lot of veggies, it consists of more than 80% of my diet since I don’t eat meat. I sneak a vegetable or 2 into every dish so that my hubby can benefit as well (he doesn’t really like vegetables, so I have to make it ymmy). I usually ground up broccoli and ad it to a chicken dish as a sauce with some rice.

There is nothing but frozen veggies for our house. We eat a steamed veggie with most meals and I love to add them to my homemade soups and casseroles as well. This challenge will be a breeze for me. I love veggies. Ii love the idea of adding brocooli to mac & cheese. Yum!

I find it hard to make things here since i am the only one who eats them. My boyfriend only eats corn, carrots, and green beans, and he won’t eat fresh green beans. So I have all kinds of frozen veggies, corn, green beans, spinach, carrots, etc. I need to just eat for myself at lunch. I wish my boyfriend wasn’t such a picky eater. Heck my 6 kids weren’t as picky as he is!!! LOL

this isn’t much of a challenge for me. I always stock up on lots of frozen veggies, all kinds. I use them for soup, stew, in casseroles, sated with a little olive oil and a sprinkle of parmesan. There are so many things you can do with frozen veggies.

one of my favorite ways to use frozen veggies is to cook them up and have a steaming hot bowl of mixed veggies with a bit of butter and some slices of wheat toast. deeelish! excellent quick dinner!

We always keep frozen peas, soybeans, and chopped broccoli in the freezer. They are all small and thaw quickly so I can just add them at the end of cooking. Macaroni and cheese, pasta salad, soup.

We make our own soup by bringing broth to a boil, adding chopped cabbage, diced cooked chicken, and pasta, and cooking for the time on the pasta box. When it is done, grind some fresh pepper in and add any combination of the frozen veggies listed above. It is hearty and healthy!

I love making brown rice and adding veggies. I always use fresh so finding flash frozen will be my challenge. I have to shop outside my area to get many organic products. Those special trips are hard to schedule and I sometime have to do with what I have.

We purchase bell peppers in a variety color pack…b/c it pans out to be less expensive than buying them individually, then we slice and freeze them for recipes later. We often put them in egg beater omelets.
